Need an easy dinner after a long day? Look no further! This easy, Out-of-this-World Easiest Lasagna Soup will be on the table in less than 30 minutes. Even simpler, it uses only one pot, saving you time!

My family loves this soup! It helps keep them warm in the cold winter months. Find out my favorite ways to stay warm in the winter here. It tastes like lasagna, though they tell me it tastes much better. Like lasagna, but without all the mess and trouble! You probably already have all the ingredients in your pantry.

***NOTE: Do not use this recipe in a slow cooker, crock pot, or instant pot. Those require less liquid and the soup will not turn out right if you use them.

I make a gluten-free version of this recipe for my husband using chickpea noodles or red lentil penne pasta. Whether you use regular noodles (any type works well, but our favorite is bow tie pasta) or gluten-free, this fantastic out-of-this-world lasagna soup recipe is like a warm hug.

I also use ground turkey for this recipe as it is lower in fat than traditional ground beef. However, this recipe pops when ground Italian sausage is used.

I know the recipe variation calls for ricotta cheese, but I use cottage cheese to the same effect. It is a budget saver!

How to make this yummy, out-of-this-world lasagna soup:

1. In a medium pot, brown your ground beef (or turkey, pork, or sausage) with the Italian seasoning over medium heat. Add the onions, garlic, and mushrooms if you desire. Saute until the onions are transparent and the mushrooms are tender. Drain the fat.

2. Add the tomato sauce, diced tomatoes, crushed tomatoes, chicken broth, spices, bay leaf, spaghetti sauce seasoning, salt, pepper, and the noodles. Mix well. Bring to a simmer and cook, stirring occasionally until the noodles are tender or al dente.

3. Remove from heat, add the cheese, cottage cheese, and heavy cream. Stir until combined and the cheese is melted.

4. Serve hot with chopped parsley and parmesan cheese sprinkled on top.

That’s it. Super easy, super simple. Add regular bread or garlic bread for dipping. Round out your meal with a green garden salad and a dressing of your choice. Easy quick meal!

Here are the ingredients I include in my lasagna soup. I know the list is long, but they are probably live in your cupboard already:

Ingredients

  • 1 lb ground turkey (or beef or sausage)
  • 1 Tbsp vegetable oil
  • 1 medium, onion diced
  • 4 cloves of garlic minced
  • 8-10 cups chicken broth
  • 6 oz tomato sauce
  • 14 oz crushed tomatoes
  • 14 oz diced Italian tomatoes
  • 1 Bay leaf
  • 1 packet spaghetti sauce seasoning
  • 1 tsp Italian seasoning
  • 8 oz dry chickpea pasta noodles (or other pasta of your choice such as bowtie pasta)
  • 1/3 c. heavy cream
  • 12 oz cottage cheese
  • 1/3 c. mozzarella cheese
  • Parmesan cheese to sprinkle on top
  • Parsley chopped for garnish

Tips for making Lasagna soup:

  • If your soup is too thin, try these tips: add more cheese. You may also substitute the heavy cream for cream cheese. This will make it more creamy. However, you may only need 4 oz of cream cheese.
  • Add more cream to thin it out. This will give the soup a creamier consistency.
  • Add more broth if it is too thick to get the consistency you prefer.
  • Use vegetable broth instead of chicken broth.
  • For a lower salt option, use low-sodium broth.
  • Ground beef, turkey, pork, or Italian sausage may be used. They will each give a slightly different flavor. I have used all of these and my family’s favorite is Italian sausage.
  • For larger crowds, this recipe doubles easily. I usually double this recipe for my gang of 7 so there are leftovers for the next day.

Healthy Lasagna Soup– Replace beef with frozen vegetables of your choice. Use vegetable broth and low-fat cheese.

Cheesy Lasagna Soup– Add more mozzarella and parmesan cheese along with ricotta cheese to make a really creamy soup.

Chicken Lasagna Soup– Replace beef with 1-2 cups shredded rotisserie chicken.

Vegetarian Lasagna Soup/ Vegan Lasagna Soup– Use vegetable broth, vegan cheese, vegetarian beef crumbles and 1/2 cup frozen vegetables.
